Homemade Protein Bars

3P (Pumpkin, Protein, Play-Doh) Bars

2 c canned pumpkin
2 T real maple syrup
1½ t ground nutmeg
½ c flax seeds (grind in coffee grinder in ¼ c batches)
½ c oats (grind in coffee grinder in ¼ c batches)
8 scoops (116 g) Trader Darwin’s Soy Protein Powder

Preheat oven to 400˚F. Line a 9”x13” baking pan with aluminum foil and lightly coat the foil with oil (approximately ½ teaspoon of oil).

In a medium bowl, combine pumpkin, maple syrup, and nutmeg. Add ground flax seeds, ground oats, and protein powder, and mash together with a spatula until thoroughly combined. Let sit for a few minutes so that the dry ingredients can absorb the moisture from the pumpkin. It should have the consistency of Play-Doh. Press the dough evenly into the foil-lined baking pan.

Bake at 400˚F. After 20 minutes, remove the pan from the oven and use the foil to lift the baked dough out of the pan. Flip the whole thing onto a baking sheet and peel away the foil. While still warm, slice into 12 squares and separate the squares a little (so that air can flow between them) and bake for 10 minutes to dry the bars more thoroughly. Remove squares from oven and transfer to cooling racks to cool thoroughly.

Store in the refrigerator for up to a week (or freeze for longer storage). They taste delicious with a bit of lowfat cream cheese (also called Neufchâtel cheese) smeared on them.

Flax & Chocolate Protein Bars

These bars are not very sweet but taste subtly like chocolate and peanut butter, like a homemade PowerBar.

½ c flax seeds (grind in coffee grinder in ¼ c batches)
½ c oats (grind in coffee grinder in ¼ c batches)
8 scoops (116 g) Trader Darwin’s Soy Protein Powder
1 oz dark chocolate (70% cocoa), finely grated
4 T natural creamy peanut butter
2 T real maple syrup
1 c water

Preheat oven to 400˚F. Line a 9”x13” baking pan with aluminum foil and lightly coat the foil with oil (approximately ½ teaspoon of oil).

Use the small holes on a box grater (or a microplane) to grate the dark chocolate. In a medium bowl, mix together the ground flax, ground oats, protein powder, and grated chocolate. Add the peanut butter and maple syrup. Use your hands to rub these ingredients together. Once thoroughly mixed, add water and continue mixing to make a dough.

Press the dough evenly into the foil-lined baking pan and bake at 400˚F for 15 minutes. Remove the pan from the oven and use the foil to lift the baked dough out of the pan. While still warm, slice into 12 squares and transfer the squares to a cooling rack.

Store in the refrigerator for up to a week (or freeze for longer storage).
